The Montefalco Sagrantino DOCG Passito 2021 is obtained through a meticulous drying process of the Sagrantino grapes, which enhances its organoleptic characteristics. The result is a full-bodied and structured wine, with a long aromatic persistence and a tannic finish accompanied by an enveloping sweetness. The color is a intense ruby fading towards garnet. With remarkable aging potential, this passito will evolve magnificently in the bottle, further improving over the years. The vinification involves a maceration on the skins for at least 10 days, at a controlled temperature between 26 and 28°C. The aging lasts 36 months in oak tonneaux, followed by an additional refinement of 4 months in the bottle.
Aroma: opens with hints of fresh red berries: black cherry and cherry, moving on to wild berries, such as strawberry, and spices such as star anise and vanilla.
Flavour: the fruit and sensuality of Sagrantino return pleasantly in the mouth, modulated by savouriness and subtle, pleasant tannins.
This wine pairs well with game, aged cheeses, almond pastries, or can be enjoyed as a meditation wine.
