AGED HAM

Our aged ham is made using Italian pork loin and following traditional and artisanal production process.

This particular ageing process is carried on in a healthy environment and gives our traditional ham the typical flavor and fragrance of our lands.

AGED CAPOCOLLO

Capocollo is a seasoned raw salami, prepared using the upper part of the boned and salted pork neck.

It is completely handmade.

Then it is seasoned with black pepper, garlic and wine and left to mature for at least three months in dry and ventilated rooms that allow it to slowly age.

AGED SALAMI

Our salami is made exclusively with local pork meat.

We use the part of the pig shoulder, which gives it a light color and delicate flavor.

We only use high quality natural flavors for seasoning.

FRESH AND HALF-AGED PECORINO

Thanks to the excellent pastures rich in good forage, Umbrian cheeses are a guarantee for all those who love healthy products.

Our cheese is obtained from the processing of pasteurized sheep’s milk, processed with traditional technologies with the help of the addition of selected lactic ferments. It is a cheese with a compact texture and typical flavor and aroma.

The Pecorino LA VENERANDA can be appreciated paired with a simple slice of homemade bread, but can also surprise you if paired with our wine jellies.

Fresh Pecorino Cheese – La Veneranda

It is a cheese that is characterized by the genuine taste that comes from the exclusive use of local sheep’s milk, which comes from wild animals that pasture in the green Umbrian hills. Our fresh Pecorino cheese can be appreciated with a simple slice of homemade bread, but can also surprise you if paired with honey and jams.

Product features: Soft and dry pasta with a delicate and slightly spicy flavor. Furthermore, the main characteristic is the aromaticity of the local sheep’s milk, which comes from wild animals that pasture in the green Umbrian hills. Aging takes place in 40 days. During this period, the Pecorino cheese is placed in special room on wooden boards under controlled temperature and humidity.

Ingredients: sheep’s milk, rennet, salt.

Storage: In the cellar or in the refrigerator at 6 ° C, wrapped in simple aluminum foil, it can be kept perfectly for over six months.

Semi-aged Pecorino Cheese – La Veneranda

Excellent cheese made exclusively using sheep’s milk, selected and aged in the special rooms for about 6 months.

Product features: soft and dry pasta with a delicate and slightly spicy flavor. The main characteristic, namely the aromaticity of the milk base, is predominant but at the same time is very pleasant at the palate. During the six months of ageing, the Pecorino is placed in special rooms on wooden boards under controlled temperature and humidity.

Ingredients: sheep’s milk, rennet, salt.

Storage: In the cellar or in the refrigerator at 6 ° C, wrapped in simple aluminum foil, it can be kept perfectly for over six months.
